The Yamazaki is a layered single malt, matured in Bordeaux wine casks and Sherry casks as well as malt in Mizunara casks with distinct berry notes. The Chita is a single grain whisky with a medium, but zesty finish and vanilla-melon notes. The Hakashu is their Distiller’s Reserve single malt, a complex whisky made with a mix of lightly-peated and heavily-peated malts. The three come together in Toki.
The Notes: Orchard fruits reign supreme, with a touch of honey-peppermint on the nose. Herbs and toasted almonds also make an appearance on the palate, with the slightest whiff of oak.
The Finish: The finish is a soothing sort of spicy, with lingering ginger and pepper.
